Melon Preserve

  • 1 jar (200 g) melon preserve
  • 60 ml MannaBrew, strongly brewed

Seed Crackers

  • 100 g raw sunflower seeds
  • 100 g raw pumpkin seeds
  • 100 g raw sesame seeds
  • 60 g flaxseeds
  • 20 g psyllium husk
  • 20 g MannaBrew Mesquite Flour
  • 10 g salt
  • 500 ml water

Roasted Cashews

  • 120 g raw cashews

  • 60 ml MannaBrew, strongly brewed

  • 5 g (1 tsp) salt

To Serve

  • 2 (approx. 200 g each) goat cheese logs (Chevin style)

  • 1 (100 g) Brie cheese wheel

  • Seasonal fresh fruit (figs, grapes, or sliced pears)

INSTRUCTIONS

  1. Melon Preserve: Strain the melon preserve, placing the fruit pieces back into the jar. Pour the strained syrup into a small saucepan and add 60 ml of strongly brewed MannaBrew. Simmer over medium-low heat for 15–20 minutes until reduced to a thick syrupy consistency. Pour the warm syrup back over the melon pieces, seal the jar, and set aside to infuse overnight at room temperature. 

  2. Seed Crackers: Preheat the oven to 150°C and line 2 baking sheets with baking paper.

  3. In a bowl, combine the sunflower seeds, pumpkin seeds, sesame seeds, flaxseeds, psyllium husk, MannaBrew Mesquite Flour, salt, and 500 ml of water. Stir well and let sit for 5 minutes until the psyllium husk absorbs the liquid and forms a thick mixture.

  4. Using a 5 cm round cookie cutter as a guide on the prepared baking sheet, spoon in the seed mixture and press flat to form neat discs (about 3–4 mm thick). Repeat for the remaining mixture.

  5. Bake at 150°C for 30 minutes until crisp and golden. Transfer to a wire rack to cool completely.

  6. Roasted Cashews: In a small bowl, combine the raw cashews, 60 ml of brewed MannaBrew, and salt. Leave to marinate at room temperature for 30 minutes.

  7. Drain the cashews and spread them in a single layer on a baking sheet lined with baking paper. Roast at 150°C for 20–25 minutes until golden and crunchy. Allow to cool.

  8. Assembly: Arrange the goat cheese logs and Brie on a wooden serving board. Add the seed crackers, roasted cashews, and MannaBrew melon preserve alongside fresh seasonal fruits.

TIP: To prevent the seed mixture from sticking to the cookie cutter when shaping the crackers, dip the cutter lightly in flour between each disc.

How to Brew MannaBrew

Put 1 level scoop of MannaBrew (8 grams) into the portafilter, spread grounds evenly, and extract 30ml espresso as normal. (Not recommended for bean to cup machines).

Fill basket halfway with MannaBrew, place on medium-high heat, and allow to percolate.

Use 1 level scoop of MannaBrew (8 grams) per 250ml cup of water. Stir through gently. Allow to brew for 4 minutes before plunging.
